Browsing through my LCBO Hot City Cocktails book for a summery bevvie for this weekend, and it's hard to pick one, they all look so refreshing! LOL

PEANUT BUTTER COOKIES

Go ahead, indulge. Felt a sweet tooth coming on and licorice wasn't cutting it, so I made some cookies. Here is a super easy recipe for PB cookies:

You will need:

1 c. PB
1/2 c. sugar
1 egg

Pre-heat oven 325°. Mix in medium bowl PB, sugar + egg. Roll 12 small balls onto un-greased baking sheet. Press with fork. Bake for 10 minutes [or until golden, don't over bake!] And repeat. You will have 2 dozen cookies. Yummy.
